I had a delicious day yesterday.
I started off with a breakfast in bed of half an apple and half of a banana.
It was followed up with some toast with strawberry jam.
For lunch, I had some of the vegan Irish stew that I was testing for a blog/St. Patty’s recipe.
You’ll have to wait until next Monday for the recipe.
There are always yummy snacks at my church group meetings on Tuesday evening, and yesterday there were chocolate covered strawberries. I also had a couple of other little sweets.
For dinner, I made a nourishing bowl of green beans and hijiki over brown rice, millet, and edamame.
I’ve actually really grown to like hijiki. If you cook it the right way it comes out really well. I like it simmered down in water and natural soy sauce.
Later on, Keenan brought me a salad from his restaurant, which was the last thing that I ate for the night.

What is hijiki? I’m intriqued.
Chocolate covered strawberries are my weakness! I’ve never heard of hijiki but I love brown rice, green beans and edamame so I predict that I would love that dish!
