What I Ate Wednesday #33

Happy Wednesday, friends!  I hope you’ve all been making healthy choices and staying positive this week, because honestly, it makes all the difference in how you feel.  Great food, a little exercise, enough sleep, and a positive mindset can take your life from alright to excellent right before your eyes.  It’s kind of an amazing transformation.

I had my share of great food yesterday, starting off with what I like to call “the gas station breakfast of champions”.

Gas Station Breakfast of ChampionsI had to head about almost as soon as I was up, so I scrounged up the best on-the-go breakfast that I could.  I ended up with a banana, some raw almonds, and an Odwalla Blueberry B juice.  Not too shabby.

When I got home, I made myself a quick lunch to eat before heading out to my church group meeting.

Rice, Chickpeas, and BroccoliCan’t go wrong with brown rice, chickpeas, and broccoli, especially topped with a little tamari and dulse powder.

I’ve been trying to include more sea veggies in my diet lately, and dulse was my sea veggie of the day.  Since I don’t consume iodized salt on a regular basis, I need to get iodine from other sources, and sea veggies are the best natural source.  Without iodine, you’ll end up with thyroid issues, which can include a goiter, or an enlargement of the thyroid gland, causing your neck to balloon out.  Not a pretty picture.

After my meeting, I came home and made myself an awesome chickpea salad sandwich to munch on while I waited for Keenan to get home from work.

Chickpea Salad SandwichIt included chickpeas, avocado, red onion, Vegenaise, yellow mustard, sweet relish, red pepper flakes, more dulse, and sea salt.  I toasted my whole wheat bread, and added a couple leaves of romaine for good measure.  It was pretty heavenly.

When Keenan got home, we made a vegan roasted veggie pizza from Trader Joe’s.

TJ's Roasted Veggie PizzaWe love this pizza.  Keenan doesn’t even miss the cheese, and I love all the veggies, especially the artichoke hearts and the caramelized onions.

After pizza, we shared a pint of TJ’s strawberry coconut milk ice cream.

Strawberry Coconut Milk Ice CreamOh so delicious!  I am a huge fan of coconut milk ice cream.  Honestly, I think it’s better than the original stuff.  If you haven’t tried it yet, get yourself some now!

    I went to a potluck with my Care group last night and had all kinds of bean dishes including my black bean soup to which I embellished with tomatoes and garbanzo beans, also chipotle salsa. Mmmm!

  2. That vegan pizza looks delicious!! You are right, you definitely do not need cheese for a great pizza!
