What I Ate Wednesday #30

I wasn’t planning on using Sunday for my What I Ate Wednesday photos this week, but everything that I ate that day was so good that I couldn’t help but snap some photos to show you.

I started my day with a bowl of steel-cut oats with ground flax, blueberries, and my raw cashew butter.

For lunch, I made myself a green smoothie with strawberry, mango, pineapple, avocado, chia seeds, and kale.

green smoothieDinner was my favorite part of the day.  I’ve been playing around with some recipes from The Kind Diet by Alicia Silverstone, and Sunday I decided to make the kabocha squash soup and fried rice with daikon and lotus root with some tofu cooked in sesame oil and shoyu.

Kabocha Squash Soup and Fried RiceIt was pretty much the most amazing meal ever.  They’re so simple that I can definitely see both recipes becoming regulars for me.

A bit later I had a slice of my hearty multi-grain bread toasted with my boyfriend’s mom’s homemade strawberry jam.  Yum!

Toast with strawberry jamFor our last snack of the night, Keenan asked me to make the vegan carob ganache from the Pure Mamas blog.

    It all looks very yummy.
    I recently read The Kind Diet too! Sesame oil makes everything taste divine hehehe!

      Thank you, it was! Definitely agree about the sesame oil. One of my favorites is cooking mushrooms in sesame oil and natural soy sauce. Yum!
