What I Ate Wednesday #29

Hey guys!  It’s another fabulous What I Ate Wednesday over here, so let’s get to it!

Keenan and I headed out to run some errands just about as soon as we were up yesterday, so my breakfast ended up being a soy chai from Seattle’s Best Coffee.

We were still out and about when we got hungry for lunch, so we swung into Quiznos, where I got a veggie guac sandwich on wheat, with a side of sea salt and vinegar chips.

Dinner was brown rice and white beans, topped with fermented cabbage and hemp seeds.

rice beans fermented cabbage hemp seedsI was really surprised when Keenan actually helped himself to some, as well.  Usually he stays away from the more health-nutty items, so I figured fermented veggies would scare him away.  Guess not!  I swear he finished his bowl before I’d really even started mine!

My dessert was a big bowl of butternut squash, roasted with coconut oil and coconut sugar.

butternut squashI got the idea for rubbing it with coconut sugar from a suggestion that Daniella of This American Mama made on the Lindsay Loves Veggies’ Facebook page, and it turned out so, so well!  This might just be one of my new favorite healthy desserts!

I just picked up some fun new-to-me veggies from the Asian market today, including daikon, burdock, and lotus root.  I can’t wait to try them out this week!  Maybe I’ll even have some cool stuff to show you on next week’s WIAW!

  1. Delicious eats and delicious veggie finds. I hope you share what you make. When I make kimchi, we prefer it with daikon instead of napa cabbage. Haven’t yet tried burdock other than at Live.

    Love Quiznos subs, the veggie one rocks. Im always really surprised when any one in my household tries out one of my recipes, they are pretty weird sometimes and they think all meals should have meat in them;) My Dad will usually try it and than say something like “Imagine this with chicken” haha.

      Haha I can imagine that. My parents are finally starting to come around to enjoying a more plant-based diet after almost 2 years of reading my blog. Keep encouraging them to try new things, and drop hints occasionally about how certain foods are good/bad for their health and why. Some of it will stick in their brains even if it doesn’t seem like it at the time. :)
