What I Ate Wednesday #27

Hey hey!  I’m back and rolling with another edition of What I Ate Wednesday!  These are my eats from last Friday, one of the first days that I really got back on the wagon and started cleaning up my eats and preparing all of my food at home.

I had been avoiding my juicer for far too long, so it sure felt amazing to start my day with a delicious, nourishing green juice.  It contained pear, cucumber, celery, and ginger.  I actually used the recipe from January’s Whole Living magazine.

Soon after, I followed it up with a green smoothie.  Gotta get those greens!

The smoothie was another one taken from Whole Living, and contained mango, flax, lime, spinach, and tahini.  This was definitely a new combo for me, especially the addition of tahini, but it really wasn’t bad!  Different, but not bad.

My lunch at work was a quinoa salad similar to the one I posted on Monday.

It contained quinoa, carrot, red cabbage, spinach, pumpkin seeds, and Goddess dressing.

Dinner at work was a hearty bowl of homemade black bean chili.

Not pretty, but it sure did taste good.  I had another bowl the next day topped with loads of fresh cilantro and avocado.  Now that’s the way to do chili!

My after work snack was a plate of parsnip fries paired with natural bbq sauce.

It was a yummy and simple way to use up the last of the bag of parsnips in my fridge that would have otherwise gone bad.

Right before bed I caved into the temptation for something sweet and enjoyed a bowl of Panda Puffs cereal with coconut milk, which I didn’t grab a picture of.

Overall, I had a delicious day of food, and the rest of the week continued in similar fashion with lots of whole, plant-based deliciousness.

    The parsnip fries look great, and your green smoothie!

  2. What a green day! Have to start juicing again – but all I crave when it’s cold outside is some coffee or tea to start my day.

      I definitely get the coldness factor here in Seattle! A lot of the tr I’ll have a tea or hot water with lemon first, then follow it up woth a juice.
