Hi friends! How’s your week treating you so far? Great, I hope!
We’re back to another day of What I Ate Wednesday, and I’m stoked to show you some of the fun stuff I ate yesterday! And, as usual, I’m linking up with Jenn and the rest of the WIAW community over at Peas and Crayons.

I followed it up with a bowl of apple cinnamon oats.
I changed the recipe a tiny bit from what I posted last year, by cooking the oats in water, instead of almond milk, leaving out the protein powder, and adding a little bit of ginger and sliced almonds.
I also made myself a yummy pear green juice.
Gotta have my juice!
My schedule is pretty strange, since both Keenan and I work evenings (I definitely don’t get my sleep during the magical hours of 10am and 6pm), and soon after my breakfast I headed out to my Tuesday evening church growth group meeting. There I had two delicious cupcakes that one of the girls made. I didn’t get a picture, but they were so good!
When I got home, Keenan had dinner prepped and waiting to be cooked. He cheffed up a delicious mix of potatoes, black beans, bell peppers and onions, which he served with a vegan spicy cheese sauce, and some salad on the side.
I have been craving potatoes for a while, so it was incredibly satisfying meal for me. It was quite filling, as well.
A couple hours later, I was a bit hungry again, so I roasted a small head of cauliflower in olive oil, and topped it with red pepper flakes.
I like to roast it until it’s nice and soft, with lots of the brown caramelized crispiness on the outside. It’s a perfect snack to me.
I also had a nice cup of chamomile tea (I’ve fallen in love with Tazo’s Calm tea), with some goji berries, while I laid in bed.
Chamomile tea is a great way to unwind at the end of the day.
So that’s what I ate yesterday.
