Vegan Mango Lassi

Okay, I officially have a new favorite breakfast/snack food.  It’s rich, creamy, naturally sweet, and has great health benefits to boot!  It’s a vegan version of mango lassi, a concoction of yogurt, mango, ginger and cinnamon.  I know this isn’t technically a beverage, so I’m breaking of rules of Thirsty Thursday a bit, but I’m thinking you’ll forgive me when you try the recipe.

Probiotics from the yogurt, and the addition of ground ginger, make mango lassi a great stomach soother.  The probiotics also contribute to making this a wonderful immune system booster, along with the vitamin C from the mango, and the spices, which are natural antimicrobials.

(makes 1 serving)

Ingredients

  • 1 mango
  • 1 6 oz container plain coconut milk yogurt (I used So Delicious brand.)
  • 1/4 t ground ginger
  • 1/4 t ground cinnamon

Directions

1.  Slice open your mango, and scoop the flesh out of the rind.  (I open mangos similarly to avocados.)

2.  Add the mango, yogurt, and spices to the blender.

3.  Blend on high for 15-20 seconds.  Scoop into a small bowl with a rubber spatula.

I like to top mine with a scoop of chia seeds for some omega-3s and protein.

It makes an excellent breakfast, or a great snack at any time of the day.  It’s light, so it won’t leave you feeling overly full, but it still has the nutrients needed to satisfy you.
