What I Ate Wednesday #17

Guess what?  It’s Wednesday!!!  You’re half way through the week (plus it’s my Friday, after working a week straight!), and it’s also time to check in and see what I’ve been eating!  Hurray!

As always, linking up with Jenn over at Peas and Crayons.

Breakfast = Green juice. Shocker, right?

Pretty standard: cuc, celery, broccoli stem, green apple, lemon and ginger.

I also snagged a banana just before I left for work.

I arrived at work early, and was craving a snack, so I hit up the salad bar.

Romaine, spinach, cucumbers, carrots, cherry tomatoes, beets, kidney beans and red onions, with lemon juice, oil and vinegar.  My favorite part was the beets.  I’ve been crazy for those things lately!

For my dinner at work, I packed myself this lovely quinoa bowl.

Quinoa, chickpeas, spinach, hemp seeds, shredded coconut, ginger, turmeric, cumin, corinander, plus a tiny bit of almond milk to make it a little creamy (I didn’t have any coconut milk, or I would’ve gone that route.)

On my second break, I had a ripe, juicy peach.

Tip: To ripen peaches faster, place them in a bag with some bananas.  Bananas emit a gas that causes other fruit to ripen more quickly.  My peaches were ripened in less than a day!

My evening snack was jicama sticks with homemade guac, plus another peach.

The guac was seriously good.  I also had some on a slice of Dave’s Killer Bread.  And I also may have had a couple handfuls of carob chips.  Arlo may have shared as well.  He loves carob!

I was really trying to focus on getting extra veggies when I was feeling snacky, instead of grabbing for something carb-y, or compromising on something just plain bad for me.  That salad when I got to work easily could have been a bag of chips or a slice of pizza, but I made a conscious decision to grab the nutrient-packed salad instead.

Health really comes down to those little decisions.  Grabbing the chips is so easy!  It tastes so good!  It goes down so quick and feels so good as it does.  But in your heart and mind you know that you should’ve gone with the salad.  You feels so much better after the salad.  Lighter, clearer, more energized.  That feeling is what I need to keep in mind every time I make a food choice.

  1. Looks like a great set of eats to me. the jicama and guacamole looks like a great snack or lunch time option. Must grab me some next time I am at the store. thank you for the thought. ;)

  2. I really enjoyed this post! You’re right- while being healthy can seem like this huge decision you have to make, it really comes down to all the little choices you make throughout the whole day. I love that perspective because it makes healthy, plant-based eating seem so much more accessible!

    Your food looks delicious and so clean, love it!
