What I Ate Wednesday #16

Hey friends!  I’m posting a little late today because I was out romping around all morning!  It’s my only day off of the week, so I was out taking full advantage.  I also picked up some pretty awesome crystals (including a gorgeous rose quartz that actually called me back to the shop after I left), and took them down to play in the river.  It was such a beautiful, relaxing experience!

Well, of course it’s What I Ate Wednesday, so let’s get into the good stuff!

I recently picked up some aloe juice, because I’ve heard that it’s incredibly alkalizing.

I’ve been taking it as shots in the mornings, before I eat or drink anything else.

After my aloe shot, I had a hot water with half a lemon.

Seriously, such a great alternative to coffee!

Of course, breakfast was a big green juice.

I’d tell you what’s in it, but that would ruin all the fun for tomorrow’s Thirsty Thursday post!  Check in tomorrow for this delicious juice recipe!

Before I headed off to work, I had a big bowl of leftover miso soup.

I’m brand new to the whole miso thing, but I’ve really been enjoying it in soups the last few days!  This one has miso, carrot, kale, onion, tofu, and some tamari for a bit of extra flavor.  So delicious!

On my break at work I munched a quinoa/spinach salad with grape tomatoes and homemade agave dijon dressing.

It was bomb, of course.

I also snagged myself a hot soy chai from Starbucks.  It may be nice outside, but it was cooold in my hospital yesterday!

I also had a Fuji apple on my second break, but I scarfed it down and forgot to take a picture. :)

When I got home from work, Keenan kept urging me to go out for fast food, so I found one of the few half-way/sort of decent options out there, and got Taco Bell.  Ew, right?

7 Layer burrito without cheese and sour cream.  Still, ew.

This is my biggest weakness when it comes to healthy living: my willpower breaks down at night, and my love can easily persuade me into getting something not so awesome for me.  Sometimes it’s Taco Bell, sometimes it’s pizza, sometimes it’s food from his restaurant, which is still most likely loaded with white flour and cheese.

Anyone else experience this?  I believe it’s okay to let loose and eat something junky on occasion, if that’s your thing.  (I confess, I still find most junk food DELICIOUS, even though I can still look at it and say, “that’s freaking disgusting”, because I know what’s in it and how it affects my body.)  But, I feel like I’ve been giving in to my temptations and my laziness much too frequently lately, and I can feel the impact that it has on my body.

It sucks, but what it comes down to is, I need to have more food ready and available for those times when I’m feeling weak.  Some dinner leftovers, some yummy raw cereal, some hummus and chopped veggies, or some healthy, vegan cheese sauce to pour over veggies or noodles, would all be great options.  I know how to solve it, now I just need to put in the work.  You guys have any other suggestions?

What have you been munching on lately??

Have a spectacular rest of your day!

  1. I love warm water and lemon!

And YES!!! I still love junk food even though I KNOW it’s bad for me!

I love how many people have been going crazy for hot water and lemon lately! It makes me happy. :)

Glad to know I’m not the only one who likes junk food!! Thank you! You rock!

  2. I can totally relate on the boy friend ruining healthy eating! He’s always like OMG HOT POCKETS or something equally disgusting. I try and cut him off by making a compromise snack instead (bean dip, hummus, guacamole etc. with chips, or pop corn.)

    • Lindsay says:

LoL that is hilarious! I’m big on the compromise snacks, as well. We eats lots of popcorn, nachos with Daiya, and vegan mac and cheese. You know, the stuff that isn’t super healthy, but could be way worse. Sometimes he just wins though.

I love junk food too! It is so hard to stay on track and eat well at night, especially after a long/rough day! (and I consider a day when my kiddos don’t use physical aggression on me a great day!) My weaknesses are cookies and sweets.

    • Lindsay says:

Wow! I’m glad that my hospital patients don’t beat me up! You’ve gotta be a one tough lady!

I’d definitely say I’m more of a salty, fatty snack person than a sweets person. Mixing dried fruit and nuts in the food processor makes some really yummy healthy sweets, though!

Your quinoa salad looks really yummy. Alas, few fresh greens here in Newfoundland. Tomatoes, either, for that matter.

Suggestion (although you’re probably doing this already): cook up a pot of your favorite grain and freeze it in freezer bags in single or double portions. Bags stack easily and defrost quickly (nuke or dip in hot water).
