Super Veggie Juice

I drink a lot of fresh juice.  I actually juice just about every day.  It makes me feel nourished, refreshed, and gets my day started on the right foot.  It’s an critical part of my self-care routine.

Most of the time, I stick with some variation of my standard green juice, sometimes with grapefruit, instead of apple.  Still, since I juice so frequently, I like to switch it up every once in a while and really load up on the veggies.  The taste is still great, and you’re flooding your cells with even more vitamins, minerals, and antioxidants.

(makes about 1 quart)

Ingredients

  • 1 cucumber
  • 2 celery stalks
  • 2 carrots
  • 1 small beet
  • 1 small Roma tomato
  • 1 green apple
  • 1″ chunk ginger
  • 1/2 lemon

Directions

1.  Wash all your veggies well.  Peel the beet, and remove the peel from the lemon.  Cut any nasty ends off of the carrots, as well.

2.  Run everything through your juicer once or twice.

Beets provide tons of folate and antioxidants.  Carrots are exploding with vitamin A.  Tomatoes are a good source of vitamin C and lycopene.  All of this is on top of all the nutrition in a standard green juice.  Sometimes you just need that extra boost.

For those of you without a juicer at home, you can still make this juice in the blender!  Cut all of your veggies into small pieces, then run them through the blender with a small amount of cold water.  Once a pulp has formed, strain it through a metal strainer, nut milk bag or paint strainer bag.
