Healthy Vegan Blackberry Milkshake

I don’t reminisce about college too much anymore.  I absolutely loved my college experience (Go Cougs!), but I honestly enjoy my life enough these days that I usually don’t get too caught up in looking backwards.  Every once in a while, though, something random will catch me, and remind me of the greatness that is Pullman, Washington (home of Washington State University, for those of you who aren’t local.)

It’s sorority recruitment week over at WSU right now, and whenever I go on Facebook and see statuses reflecting that fact, I’m reminded of the adventures I had with my Alpha Phi sisters back in the day.  One of those memories is a little local burger joint called Cougar Country.  Their burgers were alright, but one thing they really excelled in were milkshakes.  Thick, creamy, delicious, and made with real fruit instead of whatever nasty syrups most places use.

My favorite milkshake flavor has got to be blackberry.  Strawberry’s alright, but there’s just something special about blackberry.  The flavor’s just a bit richer, a little less generic.

The other night, the boyfriend and I were sitting around watching a movie, when I got the urge to make a smoothie.  I changed up my usually smoothie recipe a bit, used a frozen banana, left out the greens, and added a little vanilla extract.  It was perfect milkshake consistency.  I brought mine out, Keenan took a sip, and immediately commanded me to go make him one.  When the super picky boyfriend likes it, I know I have a winner!

Here’s my healthy, vegan version of my old Cougar Country favorite.

Ingredients

  • 1 1/4 cup almond milk
  • 1 scoop vanilla protein powder
  • 1 T chia seeds
  • 1/4 t vanilla extract
  • 1 frozen banana
  • 3/4 cup frozen blackberries

Directions

1.  Add all ingredients to the blender.  Blend on high for 30-45 seconds.

Just think, a creamy, satisfying blackberry milkshake, minus all of the saturated fat, cholesterol, and added sugar!  That’s enough to get me excited!

Oh yeah, and if you needed another reason, blackberries are a great source of vitamin K, folate, manganese, fiber, and antioxidants.

I love it, Keenan loves it, and I’m sure you’ll love it, so drink up, my friends!

    Ohh I’ll have to try this! I’ve been just using almond milk and coconut milk ice cream to make mine when I have a craving :) . My favorite are mint!

      Coconut ice cream milkshakes sound bomb!! Frozen bananas are a bit kinder on my budget, but I might have to splurge and try that sometime!
