One of my favorite types of meals are simple grain bowls. They’re filling, they’re nutritious, and there’s about a thousand ways you can customize them to fit your taste and mood! Just pair some grain, beans, and veggies, and you’re set!
Most of my grain bowls are thrown together so quickly before I run out the door to work, that I don’t really consider them recipes. However, I love giving you insight into my daily eating habits, so as to make healthy eating easier for you, so I whipped up one of my favorites to show you!
Ingredients
- 3/4 cup cooked brown rice
- 1/4 cup salsa
- 1/2 cup black beans
- 1/4 cup corn kernels (I scraped mine fresh from the cob.)
- 1 small Roma tomato, diced
- 1/4 bell pepper, diced
- 1/2 avocado, diced
- cilantro, for garnish
- 1/4 lime
Directions
1. Layer the rice, salsa, beans, corn, and veggies. Top with fresh cilantro, and squeeze the juice of 1/4 of a lime over the top.
2. For best results, mix well before eating.
These flavors meld so incredibly. I never, ever get bored of my Mexi bowls. It’s also packed with nutrients, antioxidants, protein, and healthy fats, to keep you going for hours.
Like a bit more spice? Mince up a bit of fresh jalapeno and toss it in!
Craving your omega-3′s for the day? Sprinkle some hemp seeds over the top!
For a fun little something, add a chopped Field Roast chipotle “sausage”, a dollop of vegan sour cream, or a sprinkle of cheddar-flavored Daiya!
The great thing about grain bowls is how customizable they are. It so easy to make something you love, out of whatever you have laying around. Nothing beats healthy and easy, right?
