Watermelon Green Juice

I am all about watermelon this time of year!  I posted a Watermelon Strawberry Green Smoothie recipe a couple of weeks ago, I ate half of a personal watermelon for breakfast yesterday, and today, I’m sharing with you an awesome Watermelon Green Juice recipe!

Honestly, I don’t think anything says July more than a fresh juicy watermelon!

Watermelon is more than just a seasonal favorite, though!  It’s packed with vitamin C, vitamin A, and antioxidants, like the same lovely phytonutrient found in tomatoes, lycopene!  Doesn’t that sound like a great boost to your everyday, already nutrient-packed green juice?  I sure think so!

Ingredients

  • 1/4 personal watermelon
  • 1 cucumber
  • 3 celery stalks
  • 1 handful spinach
  • 1/4 lemon
  • 1″ ginger chunk

Directions

1.  Wash your veggies well, scoop the watermelon from the rind, and remove the peel from the lemon.

2.  Run everything through your juicer once or twice.  Tip: I tend to juice everything a second time, and get quite a bit of leftover juice out of the pulp.

Overall, this still mostly tastes like a regular green juice (aka delicious!), with a splash of watermelon.  Personally, I liked it just as it is, but if you want a more pronounced watermelon flavor, feel free to add another 1/4 of the watermelon to your juice blend.
