Raspberry Carob Bites

Trying to figure out a tasty, yet healthy, vegan treat to take to a 4th of July get-together this week?  Or maybe you just have a sweet tooth and are looking for something a bit more nourishing to satisfy it with.  Well, look no further!

I found the idea for these fun little morsels on Pinterest.  I simply swapped out the white chocolate for carob chips to make them healthier and vegan, and I must say, they are pretty darn amazing!  Not to mention, they take just a matter of seconds to make!  No muss, no fuss, just a great little treat.

Raspberry Carob Bites

Ingredients

  • Fresh raspberries
  • Carob chips

Directions

1.  Insert carob chips into the center of the raspberry, where the stem once belonged, pointy side down.

2.  Eat up!

Raspberries are high in vitamin C, vitamin K, manganese, and fiber.  They also boast a low glycemic index, meaning that they won’t spike your blood sugar as much as many other fruits and sweets.

Carob is a great alternative to chocolate.  It contains calcium and potassium, fiber, and even a couple grams of protein!  These sweet treats contain no caffeine, unlike their cousin, and are safe to feed your puppy dog!  (Arlo loooves him some carob chips!)

Keep in mind that, while carob is healthier than chocolate in many ways, it should be be eaten in moderation, as it is a high fat food.  Limit yourself to a couple ounces of the good stuff, or a few handfuls of these bites.
