I swear, every time What I Ate Wednesday comes around it always ends up being my strangest, least healthy day of eats of the week. I have no explanation. I guess I should start planning my Tuesdays a bit better so I can show you guys a better example of healthy, vegan eating!
Anyway, here’s what I ate yesterday…
I ran five miles, came home and did a quick ab workout, and made myself a delicious strawberry pear ginger smoothie, minus the kale, since I didn’t have any.
Definitely one of my favorite recovery smoothies!
While I was running, Keenan ran out to grab some groceries. When he came back, he surprised me with all sorts of goodies from the Renton Farmers’ Market, which opened yesterday!
Best of the goodies was this incredible bouquet of flowers!
It was so huge that it wouldn’t fit in a normal vase, so I used a mason jar. Big surprise, huh?
Keenan also grabbed me a bottle of my beloved kombucha
and some Pop Chips.
I have never been a fan of salt and vinegar chips, until I tried these! They’re so good though! The chips and the kombucha both ended up being my before work snack. Yum yum!
Dinner was another treat that Keenan picked up for me from the farmers’ market…vegan pad thai!
Actually, it served as both my lunch at work, and as my dinner later in the evening. That to-go container holds a lot more than it seems!
Between my Thai munching sessions, I hit up Vino to wait for Keenan to get off work. He was kind enough to bring me some truffle oil popcorn, while I sipped on a glass of cab.
I’m feeling pretty special from all the spoiling that was poured on me yesterday! I have a pretty great guy.
Obviously, though, my day wasn’t the most veggie-filled ever, but I’m making an effort to remedy that today, starting off with a giant veggie juice! If you don’t eat your best one day, you can always get back on track the next!
