What I Ate Wednesday #11

What up?  How are you doing today?  I’m doing pretty awesome.  :)

It is Wednesday, so that means that I am going to show you what I ate yesterday!

I started off my day as usual with a nice, stimulating and cleansing hot water with lemon, then munched on some avocado toast with sea salt and pepper.

This is one of my favorite breakfasts/snacks right now.  It’s loaded with complex carbs and healthy fats, so it was perfect to eat before my workout this morning.

After breakfast, I headed out for a 20 minute HIIT run, then came home and did a quick upper body workout.  I’ve been slacking on the weights throughout my training, so I’m really trying to get back into it in the last month before the race.  The stronger the better, right?!

Post-workout, I blended up a berry green smoothie.

Coconut water, vanilla brown rice protein powder, ground flax seed, banana, strawberries, frozen blueberries, and kale.  Classic.

Before work, I whipped myself up a homemade chai tea to keep myself from making a trip through the Starbucks drive-thru.

I brewed two Tazo chai tea bags in one cup of hot water, the added one cup of hot almond milk and two stevia packets.  Honestly, not my favorite brand of chai (too licorice-y for my taste), but I haven’t used up the box yet, so I’m still using them.  Saved me $5, though!

My lunch at work was an arugula salad.

Arugula, tomato, carrot, chickpeas, sunflower seeds, and my sweet balsamic dressing.

My other meal at work was an awesome Mexi bowl.

It rocked my face off.  Brown rice, corn, red bell pepper, avocado, and the star of the show, Field Roast Mexican Chipotle faux sausages.

Field Roast is a cool company from Seattle that produces amazing grain-based faux meat products!  I’m obsessed with their apple sage sausages, and I really enjoyed the Mexican chipotle flavor, as well.  I’m usually not into fake meat products, especially the soy-based stuff, but these really impressed me.  The texture, the flavor, everything overall is great quality.  Honestly, I’d choose these over a real sausage any day!  For you Seattleites, did you know that Safeco Field serves Field Roast at Mariners games??  So cool!  Vegan Moxie did a great post about some of the new stuff they’re debuting at the stadium!

Wow, I promise I didn’t get compensated for that Field Roast plug!  I just really like the products! :)

Back to the good stuff.

After work, I headed down to Vino to wait for Keenan to get off work.  I read my book (currently reading: Reading Lolita in Tehran: A Memoir in Books by Azar Nafisi), sipped on a glass of red wine, and chatted with Keenan’s coworkers.

Keenan made me a salad to munch on while I waited.  (I finally got sick of eating pasta every night!)

Mixed greens, tomato, carrot, cucumber, cranberries, and walnuts, with pear dressing.  So good!  My baby has skills! :)

  4. Avocado on toast for breakfast…my kind of girl! I love the look of that wine glass…such a cool shape…oh, and the wine looks good too!
