Today was one of those lovely days where I got to do whatever my heart desired all by myself. Definitely a good thing, especially seeing as this is my final day of vacation from work!
I started out the day with an apple pie Larabar and a grocery shopping trip.
I hit up Costco, Safeway, and Fred Meyer, and came home with a trunk full of food. I heart shopping day!
For lunch, I used this beautiful pink heirloom tomato and some kale to make a salad.
I added some protein to the salad in the form of a Field Roast smoked apple sage sausage. The dressing was Annie’s Green Garlic.
This salad was a whole lot bigger than it looks in the picture. I had it in a small mixing bowl! I don’t experiment with faux meats too often, but these were a winner! Plus, the ingredient list wasn’t sketchy at all!
After lunch, I relaxed for a bit and read some blogs. While reading a guest post from Emily of Daily Garnish on Oh She Glows, I noticed her recipe for a vegan spinach and artichoke dip. I’m a huge fan of the dish, but I hadn’t tried a substitute since I stopped eating dairy. I had all of the ingredients on hand, so I whipped it up!
This was totally veggie-licious and creamy at the same time! I ate a good portion of the dip with tortilla chips, before heading out on a half hour run around the park.
I seriously had a smile on my face the entire time I was out there running. The sun was shining, the music was bumping, nature was beautiful, and I was running! There are no words to describe how much I love to run, and I am always so grateful when I actually give myself the time and motivation to get out there and do it.
When I got home, I downed a glass of water, and had a little sweaty photoshoot with Mr. Arlo.
Then I got to prepping some green juice.
- 1 cucumber
- 3 carrots
- 3 celery sticks
- 2 green apples
- 2 kale leaves
- 1/2 lemon
- 1″ chunk ginger
This made two full glasses of this bright green stuff!
Time for me to go clean up after my cooking adventures and get ready for the bf to get home from work!
