Welcome!!!

Welcome to the new home of Lindsay Loves Veggies!!!  I am so super stoked to now own my own domain and to be hosting my own blog!  Kind of a big deal!!!  I am literally THIS excited right now.

 

Did you have a great holiday yesterday?  Mine was absolutely amazing.  Keenan and I went to a barbecue at his friend’s parents’ house, and had a blast.  I brought portobello mushrooms to toss on the barby, which tuned out fantastic.  I also brought ingredients to make mojitos, which turned out to be a big hit with all of the ladies at the party.

 

 

 Mojitos

Ingredients

light rum (I used passionfruit Malibu)
club soda
mint leaves
lime wedges
agave nectar
ice

 Directions

1.  Add  desired amount of mint, lime, a tiny bit of club soda and ice to a glass, and muddle together.  I just used the handle end of a knife to mash everything up a bit.

2.  Add desired amount of rum and agave, and top off with more club soda.

3.  Drink up!

I was actually scolded when I arrived with store-bought mint.  Turns out there was already some on location! Love it!

 

Mojitos are actually one of the best cocktails for you, since the base is just club soda with lime and mint.  :)   Can you tell I had a few last night?

 

We were also handed shots of the host’s  super smooth homemade Kahlua as soon as we walked in the door, as well.  Along with about 3 others over the course of the evening.  Sooo much fun! 

Once night fell, we enjoyed a spectacular fireworks show over the fantastic view of the water.

 

We were chauffered home around 11 so that I could sleep off the booze for work.

Today I woke up, shockingly hangover-free, after sleeping in an extra hour, and got ready for work.  I drove around to Seattle, enjoying a fruit punch Gatorade, on the way, just to make sure I was out of the hangover danger zone.

 

I also devoured half of a Subway veggie sub in the car.  The other half was saved for my break at work.

 

 Of course, I had a salad for lunch. (Excuse the reused picture, I forgot to snap one today!)

 

When I went to purchase myself a snack for my final break of the evening, I realized that I had left my debit card at home, so instead of starving, I snacked on some sweet potato chips

 

and some Tazo passion tea, which I finished while waiting for the bus after work.

 

Can you tell I was tired at the end of work?  Cause I definitely was/am. 

Tomorrow, Keenan and I both have the day off, so we might go have an adventure of some sort!
